Meredith, if you could master one type of cuisine, which one would you choose?

I’m going to go with Thai food as this would also include me mastering pad thai. Whenever see pad thai on a restaurant menu I order it. It’s one of my favourite dishes, and has a wide variety of quality from one establishment to another. After trying countless pad thai dishes in my life, the best thus far is from Spicy Thai in St. Catharines, ON. Spice level 3/5 for me, please.
